Sodium benzoate (E211) has the chemical formula NaC₆H₅CO₂. It is the sodium salt of benzoic acid and exists in this form when dissolved in water. It can be produced by reacting sodium hydroxide with benzoic acid. Properties: white pellet mostly, nothing smelly, has tiny benzoin smell, taste is tiny sweet, sodium benzoate difficult to dissolve in water at normal temperature, tiny volatility in air (especially hot air), has hygroscopic property, dissolve in hot water, and also dissolve in ethanol, chloroform and non-volatility oil. Application:It can be used as food and the medicine aseptic, be used for antifreezing liquid of automobile, steel rust protection. As food additive be broad used for soy, vinegar, jam kind, sorbet, can etc.
